
Few easy steps…
Quick and easy breaded chicken parmesan Italian style! Buy and wash 4-6 boneless skinless chicken breasts. Then in a big bowl beat two eggs with all your favorite spices the more the better. In another big bowl place a cup of your favorite bread crumbs. In a big bowl 1/2 cup each of parmesan and mozzarella cheese.
Your half way there…
After washing each piece be sure to towel dry the chicken then place all pieces into the beaten and seasoned eggs. Make sure each piece are well covered with egg. Then one piece at a time dip into the bread crumbs bowl making sure all is coated well then place in a oven proof dish with the bottom coated with a layer of oil and your homemade tomato sauce I also add a 1/3 cup of chicken broth. Place each piece flat side down not overlapping each other. Then take your mixture of parmesan and mozzarella cheese and sprinkle over each piece of chicken cutlet then add more tomato sauce to cover almost to the top of the chicken.
Cover with foil. Preheat the oven at 400F place on middle rack for 45mi to an hour test to make sure it’s cooked all the way through serve on a bed of rice, favorite veggie or your homemade pasta. Enjoy….
